Cheesy Bacon Wrapped Chicken

 This is a favorite recipe in our house so I have to share. I actually got this recipe out of a magazine I get, but I put my own touches on it and made it my own.

What you need:
Desired Number of chicken breasts...however many you need.
At least one package of bacon, centercut if you have it (depending on how many chicken breasts you are making)
Season Salt
American Cheese (One slice per piece of chicken)
Balsamic Vinaigrette Dressing (I use Kraft)
Toothpicks, 2 for each chicken breast
Mine never look like this...this picture is from a recipe where they are made on the grill...so you will not have the grilled looking outside making them my way.
 


How to make:

Preheat oven to 400 degrees. Pound out each chicken breast to about 1/4" thickness. Season each chicken breast with the season salt. Place one slice of american cheese on each chicken breast and then roll up tighly. Wrap bacon around your chicken roll, make sure you wrap it tightly. I like to make sure the entire outside is covered with bacon, so sometimes I use 2 pieces of bacon per chicken breast. Once you have wrapped your bacon around the chicken, secure with the toothpicks (one on each end). Place chicken into casserole dish, season again with season salt. Baste each piece of chicken with your Balsamic Vinagerette Dressing, I like to make sure I coat them really good...I usually just pour the dressing over each piece. Cover the dish with foil and bake at 400 for about an hour. Thats it!

The hubby and kids love this and it really is super easy to make. I usually serve it with Mashed potatoes, cheesy veggies and rolls :) Its a satisfying dinner. And these are grill friendly if you choose to cook them that way :)
